    How is it that I can have one visit, but from two countries. Are the visits only unique visitors, so that would mean that one of those visitors had been to the site before?

    How is it that I can have one visit, but from two countries

    WordPress.com stats aren’t real time, so sometimes one element of your stats will update before the others. This is especially true when you are looking at stats for today. If you look back at previous days stats you are much less likely to see anomalies like that one.
