Hi there, since it looks like the posts on the site you linked to are entirely text, you can just type it directly in the Editor and when you are ready for a new paragraph, hit enter. The Paragraph block is the default block in the Editor.
If you are having a specific problem typing in the Editor, let us know what it is.

Thanks, when I copy and paste text the editor will just boldify alternate paragraphs, so I will try the classic block.

Copy-pasting text from other word processing software can sometimes bring over undesired styling. If you try the Classic Block, make sure you’re pasting the content as Plain Text:

When you write a post offline, are you using a plain text editor, like Notepad or EditPad? If so, it should paste cleanly into the Block Editor.
Regardless, if you are using Word or another word processor and you decide to use the Classic Block, as staff-sheva suggested, you’ll want to use the “Paste as Text” function, which is in the second row of buttons in the Classic Block’s toolbar. staff-mckluskey – let me circle back to the “there’s no explanation of the Classic Block’s toolbar icons” in my above reply to Staff.
There is on the Classic Editor support page but if we volunteers are meant to encourage users to use the Block Editor’s Classic Block, shouldn’t there be some explanation of those tool bar icons on the Classic Block support page rather than needing to point them somewhere else?
