  Can I take my website down so it cannot be found until I am done with the changes?

  You can make it private temporarily and then make it public again. See here: Privacy settings https://en.support.wordpress.com/settings/privacy-settings/

  May I add that I never recommend doing that. I don’t risk turning away any traffic. I don’t want Google search to try to enter the site when it’s private and place that robot.txt entry in search results. I just go ahead and do what I am doing while the site remains public.
