Hi there, could you let us know the URL of the site you’re having trouble with?
Please bear in mind that we are able to help with sites that are hosted here with us on WordPress.com, but for sites using the WordPress software from WordPress.org, there is a community forum at this address:

Thanks for the reply. I’m not really looking for support, just advice on how to update my websites in a simple and effective way. One of the websites I’m working on is: https://www.nzdrc.co.nz/.

For updating plugins and themes, if you want to insure that your production site does not go down, you may want to consider creating a staging site where you can copy the site over and then work on updating things to make sure that there aren’t any issues. Once you have done that and identified any issues with plugins or themes on the staging site, you can then be more confident in making the change that did not cause issues on the production site.
The one thing to keep in mind always, is before updating a production site, always make sure and do a full complete backup of the site, just in case something goes wrong, you can restore the backup.
I would suggest contacting your hosting provider about creating a staging site, as well as backup options for your site. Some have quick and easy ways to do that, and some do not.
