  I would like a paid subscription site. Should I choose business as my plan?

  Hi there,

  That type of site is not possible on WordPress.com, regardless of the plan you choose. For a subscription based site you will need to get a self-hosted WordPress.org site instead where you can install plugins to give it that functionality.
