What are the limitations to a paid account from an experienced WP site builder?

I am wanting to simplify things and scale way back on a WP site. I’ve had my own hosted WP sites for nearly as long as WP has been around and built dozens of WP sites for others over the years.
I’m looking to find some documentation that clearly outlines the limitations for a WP site if I elect to do a wp.com paid site. Everything I’m finding is aimed at first-timers, and limitations are not very obvious.

Shortly, if you’re experienced in working with self-hosted WordPress, things you’re used to that you won’t have here are FTP access (none at all, so no phpMyAdmin, no uploading of SQL files or editing the database directly, and no custom code), plugins and custom themes.
On the other hand, we take care of software updates, security and backups for you, SEO is included by default, as is spam protection, and a bunch of other stuff you can only get via premium plugins on a self-hosted site, including everything in the Jetpack, VautPress and Akismet plugins. On WordPress.com there are also no bandwidth limitations so you’ll never reach a maximum traffic cap, and our CDN makes it nearly impossible that your site will ever go offline.

Thanks, will check that link. All sounds good, but concerned about the no-external themes (will depend on what’s availabl internally) and how much tweaking allowed (my understanding is none, but read in a few places about an extra fee to access CSS?).

The only themes we can use on WordPress.com hosted blogs are licensed and adapted to run on our multiuser software the themes are found here http://wordpress.com/themes/ and in your dashboard at > Appearance > Themes
We cannot:
upload any third party themes,
create child themes,
create our own themes,
edit templates,
create own own layouts,
or use stylesheets from other themes.There is no FTP access to any wordpress.com sites. See:

Also be keenly aware that you cannot transfer any theme from https://wordpress.com/themes/ which is licensed and adapted to run on WordPress.COM software to a WordPress.ORG site, and visa versa. The two run on different software and have different versions of some themes with the same names.
WordPress.COM is a multi user blogging platform with off the shelf themes. We wordpress.com bloggers do not have access to the template files underlying our themes on wordpress.COM hosted blogs and cannot edit them, as our blogs share a common architecture and all blogs wearing the same theme use the same underlying template found on the live demo site for each theme.
Does Customize let me edit HTML?
No. Customize allows you to edit fonts, colors, and CSS only. You can change the appearance of a theme, but not its HTML markup or PHP code. If you require this functionality, please consider moving your blog to a web host that supports theme code modifications.
