What does ‘deleting all site content’ mean, really?

Hi. I have three sites, all hosted with non-WP services. All three use WP themes and I configure all three in wp-admin on a browser. All good.
I set up WP on my iPad ages ago and somehow I guess entered the details for these three sites. Fast forward a couple of years and I can get one of the three to be editable via the WP App on my iPad. But the other two just say ‘loading’ forever.
So I went to delete all three, and the WP App warns me that all site content will be deleted, etc etc.
Really? All I’m doing is deleting the site’s presence on my iPad App. Which can’t seem to access the real site.
So I looked at deleting the whole WP account (as I said, I set everything up with hosts and THEN came to WP and made an account) and again it tells me if I delete my account I’ll be locked out of things for 30 days, etc.
SO here’s the question: Can I host my three sites with commercial non-WP providers, set up my WP platform and theme, then use the WP App on my iPad to edit content? And if so, how? I can delete the sites on the App and I can’t seem to add new versions either.
