What have they done with the Classic Editor ? It has been ruined into a hybrid

The Classic Editor has been ruined, it is now some sort of useless hybrid with the other editor, so full information about links is not included.

The Classic editor is no longer fully functional. The Classic Editor is the legacy editing experience on WordPress. The modern WordPress Editor can do anything the Classic Editor can do and much more, so even though the Classic Editor is still available, it is not recommended as it isn’t compatible with recent themes.
Instead of clinging desperately to the outdated classic editor, you better switch to using our modern block editor.

I do not see what has happened to the Classic Editor when accessing it via WP Admin on my test site, so am not sure what you mean when you say “so full information about links is not included.” I’m able to link text when it’s highlighted and can then click on the gear icon to tick the box to “open link in a new tab”. FWIW I’m using the Visual Tab in the Classic Editor not the Text Tab.
If you can be more descriptive about the problem you’re encountering, we can try to help.
Regardless, you do have the option of using Blocks, as @staartmees said, or even use only the Classic Block https://wordpress.com/support/wordpress-editor/blocks/classic-block/
Here are some learning resources for the Block Editor to get you started: https://wordpress.com/support/wordpress-editor/#learn-more-about-editing
