What is an API key for?

  Absolutely no idea, but whatever you do, don’t lose it. I gather it’s like your mega-password, since it’s only given out once. Save it somewhere in case someone ever asks you for it. Kinda like carrying your driver’s license at all times.

  If you had a self-hosted blog using the software from wordpress.org, and would want to use the wordpress stats plugin to monitor your traffic on a blog, you would need the API key to activate the plugin. Similarly if you would want to use the Akismet plugin to take care of spam for you, you would need the API key.
