what site is about (available only on desktop?)

I’m trying to set up a number of private (at the moment) sites for training purposes. If I set up a new site on the desktop, I can choose it’s type (eg fashion/beauty/travel) but I cannot seem to find out how to do this on the mobile site (ios or android), and if I create a site on mobile, I don’t seem to be able to access and edit this anywhere (desktop or mobile). So what does this mean? My site isn’t categorised and unfindable (when it goes public?)

You could try signing up through a mobile web browser, if you want.
