when I delete a category am I deleting the posts therein?

I just want to make sure I’m not accidentally deleting posts

No. Deleting a category or a tag that you assigned to any post does not result in post deletion.
Be aware that Posts and Pages are not the same https://en.support.wordpress.com/post-vs-page/ and only Posts can have categories and/or tags assigned to them.

1. To edit or delete a category assigned to a post (whether it’s a draft or has already been published), go to Dashboard → Posts → All Posts in your dashboard, hover over the title and click the Edit link. To delete the post click the Trash link.

2. To edit/delete categories in your dashboard go to Dashboard → Posts → Categories
