Why when text is centered, as in a quote, it is double spaced not single spaced?

Sorry for the delay. I had an app’t.
I had trouble with more than one blog but “worked” it out.
Here is an example of one (I changed back) to show the trouble I was having with double spaces with centered text. lbkennett.wordpress.com/2012/05/21/quiet-desperation-4-3/ Notice the quotes.
Today I was working on /2012/06/14/feeling-deserted (draft) Much to my surprise I had no trouble with single spacing when centering the quotes. This is what I hoped it would do. -
So what is the deal with the blogs I was having trouble with? I couldn’t and still can get them to single space when centering the text. It was so frustrating. I spent a lot of time working on an acceptable substitute.

You are amazing! Thank you! I can relate to the tearing your hair out in frustration. :)

Because you helped me I just figured out how to “add line breaks instead of paragraph breaks” in poetry. I am so excited. This made my day! Thank-you.
