There are no custom fields on WordPress.com blogs. You are thinking of WordPress.org sites and they are different. Please read this comparison http://en.support.wordpress.com/com-vs-org/

On the bottom of your Admin page you will find a link to the step by step Learn WordPress.com blogging Tutorial prepared by Staff. http://learn.wordpress.com/
