Why are Dashboard categories not showing on my site?

Oh boy..what have I gotten myself into?..
I have the Yoko theme. I have 4 categories i have written but they only show on my dashboard and not as the headings on the actual site – all the headings have vanished. Furthermore, I’d rather them Headings then categories..
Also I am not able to add photos to these categories that supposedly exist .
Its a far off big help question – but what do I do. I was trying to make it as “Simple” as possible..*The blog I need help with is: (visible only to logged in users)

(1) There is only one page we can post to in any blog.
(2) The static pages http://en.support.wordpress.com/pages/ we bloggers create do not automatically update.Only the dynamic pages like Archives, Categories and Tags created by the software when we publish a post will update automatically update with new posts.
By default the front page of the blog is the Page that displays all posts in your blog. You can create a static front page and have your published posts display on another page http://en.support.wordpress.com/pages/front-page/ but doing that does not change what follows.
Though there is only one dynamic page in a blog for posts (not pages) http://en.support.wordpress.com/post-vs-page/ and we cannot post to more than that one page, we can create the appearance that we have posted to more than one page.
We assign categories to posts. http://en.support.wordpress.com/posts/categories/

I’ve attempted looking at a few of your suggestions but it all seems a lil oer me head and I’m opting to start afresh but this time with the Right theme!
Therefore, can you kindly give a couple suggestions of VERY basic “blogs” as all i’m looking for is a one page or so with 4 basic headings ( that I can name). For instance a mate of mine has a simple wordpress theme, he is Ecotree.ie but don’t know his chosen theme..
Honestly, I’m not that fussy or pushed about aesthetics, just wanna get the dam tang out there!

Then don’t worry about categories, just blog. Categories do not show up until there is at least one post in it.

The jargon ye use is a lil out of my vocabulary as I thought the whole page is one big “blog”.
I really think I should start again as I mistakingly erased all my main headings ( or menus if thats what its called) and don’t know how to get them back.
The 4 points I wrote showed as categories and not as headings of what I intended.
I dont know how to change them from categories to headings for the blog?..
Hummmm.. Any basic themes you can suggest?
