Why is my blog not consistent when I change themes?

  Hey I am having serious consistency issues with my blog. I just signed up today and I want it to look legit. I tried changing my theme from twenty-eleven to Chunk and it only changed my about page, and when I click on the December 15, 2011 tab next to hello world! But the home page stayed twenty-eleven. So I changed it back from Chunk to twenty-eleven thinking it would solve consistency isssues and I could change it when I am more familiar with wordpress, and it fixed the about page, but not the December 15, 2011 blue tab, when I click on that it is still Chunk, and just a repeat of what is on the home page. How can I make this consistently Chunk on every page, every post and all the way across my Blog? Also how come my posts aren’t published on jayfayker.wordpress.com when published? I tried a test post thinking it would show up above the December 15, 2011 first post Hello World thing, but it was like hidden. I want this to be an awesome experience and have people enjoy what I’ve got to say. Please help me smooth some of this stuff out so I can rock and roll this.
