I CHOSE nothing – I created a NEW blog and chose a theme that is all I did. – I have even shared the WRONG URL to people, assuming that it was the same as my other blogs. I selected a theme called penscratch, which is dreadful, the text is almost impossible to read, a small font and pale grey, neither of which can be changed. What can I do now?

How can I keep the blog name and move everything to a new theme that accepts an old style blog designed around words? New themes are all about pictures.

I could use Independent Publisher 2. Can I also have the address “@ wordpress.com” as that is what people have in their book already? I need the static pages as well as posts

Yes you can.
All URLs on the site would redirect to the same place, so you would not lose traffic in that sense.

I do not want to change the name – Itsthatwoman is my ID – and itsthatwomanallaboutdogs is the name I want to keep, I just want to change home.blog to wordress.com

Hi there, changing site address is how you do that. 🙂
Put your current site address itsthatwomanallaboutdogs in the box, make sure that .wordpress.com is showing on the right and then the “Change site address” button should become active allowing you to change your .home.blog to .wordpress.com

Can you please describe exactly what happened when you tried to change the site address following this guide? https://wordpress.com/support/changing-site-address/
One suggestion is to use a different browser or from a private browsing window.

I just changed the theme but think I made a mistake as Independent Publisher 2 does not appear to have any static pages :( The pages are still there to me, but I see no place where the public can go to read them

I can see why you might be getting frustrated. WordPress.com doesn’t appear to make it easy to change a site address to a .wordpress.com extension. I can’t do it either. It would be easier for you to just create an additional free site at My Sites/Switch site/Add new site. Make sure you type the full free address you require.

No doubt you need to add a menu to your site.

How to restore all the posts and pages? Too much to handle. I have to make sure I have a theme that allows static pages and posts and the ability to change and resize fonts.

I can’t see any posts or pages that have been deleted.
If something has been deleted, it could be restored from the bin.
It is also possible to restore previous revisions as per: https://en.support.wordpress.com/editors/page-post-revisions/
