Are they legal to sell in your country? I think this might be a grey area. Other stuff like CBD products aren’t currently allowed.

Psilocybin mushrooms (and spores) is a Schedule I substance under the Controlled Substances Act in U.S. federal law. As such, we are unfortunately unable to provide you with services at this time.
Controlled and highly-regulated substances are listed as prohibited under WordPress.com Store Guidelines, and “anything illegal” is mentioned in our Jetpack Service Guidelines. Please also review WooCommerce and Highly-Regulated Products.
Therefore, use of WordPress.com, Jetpack and WooCommerce services to sell such products violates our Terms of Service.

Mushroom spores don’t fall into the schedule one category. Nor can I find any mention of mishrooms nor spores in the tos you have posted.
This is a common misconception with our products.
No worries I don’t plan to pursue WordPress because of responses like this.
Many of the other platforms (wix, shopify, ecwid, etc) have no issue with my business because they know how to work with potential customers and understand their products.
Thank you for your time I hope someone find this thread helpful in the future.

To clarify, we are not able to host your site here on WordPress.com for the reasons that staff-sheva has given above. However I wanted to point out that we are not the only provider of WordPress sites. If you wish to use WordPress as your website platform, you may want to consider setting up a “self-hosted” WordPress site, which you can do with any hosting provider using the free open source WordPress software from WordPress.org
Other hosting providers may have different policies regarding your website content, and if you are looking for a good web host for your self-hosted site, we recommend the following providers, who all offer easy-to-use wizards to help you get your first WordPress site set up and running:
That said, most major web hosting providers will work, so you can just ask if the one you are interested in supports WordPress. We’re not clear on their stance regarding the content you wish to publish on your site, so I do recommend that you check in with any hosts you are considering directly, to confirm there will be no issues.

As I pointed out I don’t violate any of your policies or federal law. So the reasons listed above are invalid.
Not to worry I have already found several other platforms that understand how to read the law and can happily accept my products. That’s just how good customer service works I suppose.
