Word Count From Plug-In Does Not Match Actual Word Count

I am working to get my website approved through Google Ad Manager and it’s consistently rejected for “low value content”. The recommendation is that all posts contain >500 words.
I started to investigate my word counts using a plug-in and I found the word count differs greatly than the actual word count. See below. How do I resolve this issue? Is there a chance Google is seeing the incorrect word count as well?
Below is a snip-it for a post from the post listing page. It shows a word count of 309 words. Below is another snip-it from the editor for the same post showing 2,300+ words. The article is https://usamotorcycling.com/best-tuning-kits-for-indian-scout/.Thanks!

We can’t help as that site isn’t running on the wordpress.com platform. You must solve this problem yourself by e.g. taking a look in the documentation of that plugin.
