WordPress contact form using server SMTP as 'from' instead of [field id="email"]

Help! I am hosting my wordpress site on a VPS which has sendmail with my gmail SMTP settings. I have setup a contact form on my wordpress site using Elementor and set the ‘from: [field id=”email”]’ so in theory what the user inputs into the “email” field should be who the email is from.
The problem is, it seems that the form ignores what has been entered in the ’email’ field and puts the sender as my gmail address.
Has anyone else come across this? Please let me know if you need more info.
