WordPress Guided Transfer 60 Day

  So i needed to change to WordPress.org rather urgently, but my wordpress.com domain still has about 20 days till the 60 day mark where i can transfer to bluehost.

  If i opt for the guided transfer option, will wordpress be able to complete it even though its before 60 days?

  Yes

  The name servers just need to be pointed to your new host – the domain name can stay with the original registrar
