  Lets say I buy wordpress premium for a year, and build my website. What will happen to website after 1 year, once that subscription expires?

  The website content will remain and still be accessible at WordPress.com. If you use a custom domain, then that name will go away and any links built up over the course of the year will then be broken. The features of the Premium plan will no longer be available (no ads, video uploads, etc.),
