  I am using wordpress.com (not wordpress.org). I would like to display the most recent posts of one particular category in a page. How would I do that?

  That is easy: it’s built in automatically. Every category you have already generates its own dynamic Category Page, for eg http://socialchangenyu.wordpress.com/category/poetry and if you want to display those in page tabs or in a special widget, just use a Custom Menu.
