WP.com vs. WP.org

It sounds like if I have my own domain and hosting, I will use WP.org vs. WP.com? Can I develop the site/pay for themes in WP.org or can you only develop a site/pay for themes in WP.com and then you have to transfer over to WP.org?

Yes, if you want a site with Ecommerce capability then you need a WordPress.ORG site. You can develop such a site on WordPress.ORG software. You can also move your existing blog content and domain. The two flavors of WordPress are completely separate and have separate logins. http://support.wordpress.com/com-vs-org/
To move your content you need to create an XML export file of your content. It will not include the theme as they cannot be exported. See 3 below.
