I made some changes in an existing page (updated resume) and updated.
When I checked the published page the written format was wonky…
spread across page, strange line configurations, you know…
What do I do?

Can you reply with the page URL you’re trying to update? Is it your About page which you’ve assigned as your front page in Settings -> Reading?
If so, I do see that you have areas of text with multiple spaces, and this is what Google’s cache displays as of August 19, 2012:
My best suggestion to clean that up is to use headings (h3) for the Education, Employment, and Artistic Accomplishments sections, then use unordered lists for the things below it. (Perhaps h4 for the years of employment along with the company name.)

No, the unordered lists will follow the same spacing parameters as the ordered lists.
Keep in mind that this is all dependent on the theme and its style. Some has more space between list items than others, but the spacing is pretty consistent in a given theme between ordered and unordered lists.
