Bio
Well, I am a foodie, let's get that bit of information out of the way to start off! I have been interested in cooking since a very young age, writing my own recipes and copying them down since I was in elementary school. I remember the excitement of saving some money in high school, jumping on my bike to ride across town to the grocery store for ingredients to bake my first cheesecake! That is food-love, people. Since then, I've always played around in the kitchen, and find myself emailing recipes to friends and family because I was so excited to share something I'd created. Well, this blog seemed the logical next step.
I've also been interested in healthy eating for about as long as I can remember. I remember in middle school asking the doctor how unhealthy pizza was, creating recipe cards for "healthy school lunches" to make for myself, and creating my own workout plans in high school. I learned an enormous amount of information about nutrition from reading Dr. Dianna Schwarzbein's "The Schwarzbein Principle" after my mother purchased it for me in 2000, and was more or less eating that way for about 13 years. I found that my weight pretty much was stable, but after the birth of each of my three kids, was slowly going up and there was some weight not coming off after each child. This did not make me happy, especially since I was working out regularly and "eating healthy". After the birth of my third baby, I was 12lbs over my prepregnancy weight and was very depressed. My sister-in-law stumbled upon the book Trim Healthy Mama by Serene Allison and Pearl Barrett and had amazing success. Several people close to her ended up getting it after her losing 60+lbs on it, including me! Over the course of two years of following the strategies outlined in their book, I was able to get all of the baby weight off including some, and have as of now gotten back to my high school weight! I am beyond thrilled with that. I consider the THM diet plan a lifestyle choice that I am more than happy to follow and find joy in creating recipes that are THM-compatible.
