Hi, I'm Joan, a mom, a granny, an English professor and person with chronic IBS, a chameleon-like syndrome that millions of us struggle with everyday. My blog, eatingtheclassics.com used to focus on my family's classic Italian recipes that I myself couldn't really eat. Now I am 'fessing up to this and changing my focus to low fodmap and IBS safe cooking.
