Bio
I am a fourth year student of Traditional Chinese Medicine and I am fascinated by bread. I have come to this fascination sadly because I have a gluten allergy and am not able to eat it. But after traveling to France and eating all the bread I could get my hands on, without any allergic reactions, I am determined to get to the bottom of why millions of people, like myself, have a supposed "gluten allergy," and how we can overcome it!!
Update: One year later, I can safely say that there are only particular "gluten" or "wheat" products that I still have an allergic reaction to. And thanks to long rising breads with hearty fermentations, breads are more easily digestible for me, and have a lower glycemic index, which makes them that much healthier! I am now a Physician of Eastern Medicine, with a focus in Nutrition, and I practice in South Pasadena, CA. My breads are a big part of my patients healing journeys, as I bake one for each of them every week. I am very grateful to be able to spread the healthy bread love to everyone!
