Delete, restructure, rename categories

  I’m designing my blog, but in doing so I made a mess of the categories section. I’d like to delete many categories, restructure and rename them, but that doesn’t work out at all. On the contrary, when trying, I create more categories in the wrong place etc. Help, please! Thank you.
