Categories for separate posts

I’ve used post categories and the appearance/menu to create a category menu for separate posts to come under. However, these posts also keep appearing on my main posts page. I just want the posts to show on the new category/menu… any hints on how to do this? I’ve just ticked the category so not sure why this is happening.

It’s not possible to prevent any post from appearing on the main posts page. Category pages will only show posts from that specific category, but the main posts page will always show all posts.
But you can set a static front page for your site instead of showing your posts there, and then not assign a posts page. That will have the effect of hiding your posts page completely, so category pages are the only ones that can be found.
If you still want some posts to appear on the front page you can then use the Blog Posts block to list a number of posts there, and that block has several options to control which posts appear in it:
