Change the "Add to Cart" button action for a single unique product

  I would like to change the action of the add to cart button for a single product. It would be basically a submit quote, but capturing all the different calculated fields that I have for a customizable product.
  What I would like it to do, is pretty much go through all the checkout process, with blank inputs without the customer knowing. So that way I receive an email with all the details that the customer chose on every field.

  Is there a simple way of doing this?
