Email change?

  I recently closed an account under my current email address with the intention of now assigning that email address to this new account. However, it won’t let me- is there any way around this?

  There is a 30 days pause before you can reuse your email address, https://wordpress.com/support/close-account/#re-using-an-email-address

  is there any way around this?

  If you don’t want to wait 30 days, the only way around this is to recover the closed account (reply to the email we sent you after the account closure to get help with that) and change the email address to a throw-away one. This will unblock the desired address so you can use it with your new account.
