Email followers

My email followers aren’t saying my correct number it says less and there more emails are present. I’ve got people to sign up and they haven’t been put on my list, why is this?

For which site is this? http://harrietday.wordpress.com/ has no followers at all, email or otherwise, and is set to private so only people you’ve added as viewers will be able to follow it.
If you have invited viewers and they have accepted, note that they still need to click the Follow button on your site or sign up for notifications via the Follow Blog widget before they will appear as followers in your stats. If they don’t take the step of following your site they won’t receive notifications of new posts, and they’ll only appear as viewers in My Site ->People, but not as followers.
Currently you have no viewers added to the site either. See here for info on how to invite viewers to your private site:

Your site shows a total of 432 followers on the widget, and if you look under My Site ->People you’ll see 429 WordPress.com followers and 3 email-only followers, so those numbers appear correct to me.
Where are you seeing the number that appears to low to you?

It says 3 but I have 4 email addresses and the fourth email address often changes between two. I have also got a friend to sign up but there had been no update.

If someone signed up to follow and they’re not showing in the follower list yet, it means they haven’t clicked the confirmation link in the email that’s sent out to new followers.
Also note that if your friend has a WordPress.com account, they’ll appear under your WordPress.com followers, not your email followers, even if they signed up via the widget.

I don’t understand what you mean here. The only way an email address showing under email followers can change is if a person unfollows, and then refollows with a new email account. If you can give me the actual email addresses I can check them for you.

I can’t remember the other email that often shows up on my list either.

Correct. For WordPress.com followers you only see their username under the Followers tab.
The first email you gave is not showing as subscribed to any sites in our system, not even a pending subscription, so most probably they followed, and then unsubscribed later.
The second email is associated with a WordPress.com username account, so it won’t be appearing under your email followers. I have confirmed that they are following your site and signed up for email notifications, though.
