I’d like to stop my blog automatically sending emails when an article is published, to people who have previously signed up.

You can’t do that – if someone has signed up, it’s up to them to unsubscribe. However, you can minimise what or how much they see by going to that blog’s dashboard, scroll down on the left til you see’ Settings’, click on that and go to ‘Reading’ and on that page, where it says ‘For each article in a feed, show’ select ‘summary’. Then scroll down and click on the ‘Save Changes’ button.
That shows the first few lines of each post in emails and RSS feeds. You can reduce that more by putting a short excerpt of your own choosing in the ‘excerpt’ box in the post editor for future posts, before publishing them. To stop people seeing anything (but this will also stop people you want to read them) just put a dash or a full stop in the excerpt box.
