I’m a beginner. When starting up I pasted a 70 + page document. I was trying to add a link and the whole format changed and I didn’t notice it and saved it that way. I lost all spaces between paragraphs, questions answers were line by line and it combined the whole 70 pages into on paragraph practically. I saw the setting under writing something about something changing the format so I checked that box. (Please excuse my ignorance.) But will that that reset itself or have I ruined the whole document? Help?

That’s not going to reset itself, most likely. You can try by checking your Revisions http://en.support.wordpress.com/posts/post-revisions/ and on the advanced toolbar, using the Undo arrow. If that doesn’t work, you’ll have to follow the steps below.
Whatever program you used to create the document, it wasn’t an offline blog editor, so it’s not web-compatible. Word processing software introduces all kinds of junk code HTML tags that you can’t see, but that screw up your blog over time.
I suggest you start over by deleting the posts that you put the document into (not the blog, just the posts individually) and get an offline blog editor like Blogdesk, Ecto, or Windows Live Writer. Put the document in there, then use that program’s uploading feature to put it on your blog.
An alternative is to turn the document into a PDF, and either upload it to your blog and make it available as download links OR upload it to Scribd so it displays like a book and put the Scribd code in your blog http://en.support.wordpress.com/scribd/

I have added a lot of text to the document since I post it. If I would go back through document and make the changes to the format and saved it that way would it stay that way or could this happen again.

Frankly, if you keep editing an existing document it could happen again.
To prevent this kind of problem, go to the dashboard Settings->Writing page and select “WordPress should correct invalidly nested XHTML” and save that.
