Header Issues

I can’t skip cropping and publish as is. I even switched to a different theme (Twenty Eleven form Twenty Ten) in order to be able to use my own header (in the right size). But every time I upload my header, it just says “Crop and Publish.” There’s never the option of “Skip Cropping, Publish as is,” like I read about in Learn Word Press.
My intent was to use my WP site (amandatoliver.com) mainly for my business. It’s not working out too well, though, and I think it could really be awesome. If only I had a clue.
This is really frustrating because that’s the whole reason I picked those themes. If these themes actually don’t allow for this, can you please tell me of a free one that does?
I’m very VERY non-technical, and setting up this site for myself has been a LOt of work, many hours worth of dead-ends, and confusion… What would normally take a tech-saavy person a couple of minutes to do, takes me at least 3 or 4 hours. No joke. Mostly, I think it’s because I don’t know the vernacular and what I call “inside-terms” that most people on computers and devices do know.
Another thing that’s totally confusing is, when I’m working on this from my iPad, versus working on it from my laptop or desktop, it behaves completely differently. Like, even if I WANTED to “Crop and Publish,” (which I don’t), but If I tried to do that from my iPad, I can’t. Every time I touch the crop thingy with the dotted lines, it just moves the whole page. Nothing with the actual photo. Please help. I’m about to lose it. :)
Also, I can’t figure out how to have a little section on the left for links and stuff. I don’t know how to word it, but if it’s possible, I want a column on the side (either side) that can have the title of treasury lists I’m in (on etsy) that people can click on and go see that Treasury. Would that be a menu? Or a link? Or a widget? See- told you I don’t know what I’m talking about. :)
Please please pretty please help?I feel like I’m at the 5 yard line, and if I could just get this one more thing done, I’d finally start to behappy with it.

I’d be happy to answer your questions! Please feel free to ask for additional clarification if anything I say is unclear:

The “Skip cropping, publish as is” option mentioned in Learn WordPress.com is only available in themes that have a flexible header. You can search for themes with flexible headers under Appearance > Themes in your dashboard, or you can see a list of theme in our theme directory here:

I see that you’ve picked the Ideation and Intent theme for your site, which does have a flexible header. Your custom header is appearing on the site, but let me know if you have any remaining questions about that!

You can access your site’s dashboard through Safari on your iPad, but the WordPress Dashboard is not yet tailored for use on mobile devices. There are some limitations on mobile devices, such as cropping or other features that require dragging and dropping. For those kinds of edits it’s better to use a laptop or desktop.

The column on the side of the page (called a sidebar) depends on the theme you’re using. With the Ideation and Intent theme, you have a custom Images sidebar that’s created for you with images from your latest 10 posts that have images attached to them.
There’s a second, optional sidebar in this theme that you can add Widgets to, under Appearance > Widgets in your dashboard. This sidebar won’t appear on single posts or pages, but you can see it on your blog here: http://amandatoliver.com/news/
If you want to create a list of links to another site (like Etsy), you can go to the Links Menu in your dashboard. Under Links > Link Categories you can create a new category for this list of links. Then you can go to Links > Add New to add each link to that category. When you’re done, you can go back to Appearance > Widgets and add a Links Widget to your sidebar with that link category, and those links will be displayed in the sidebar.
