How can I show only a paragraph of a blog post with the option to read more?

How can I show only a paragraph of a blog post on my blogging page with the option to click into to it to read in full? I would also like a sidebar menu listing my blog posts, how do I get this sorted, hopefully without changing the theme and entire layout please?
As the blog posts are shown in full viewers need to infinite scroll to see earlier posts which really isn’t good, I hope there’s an easy way to fix this please?The blog I need help with is: (visible only to logged in users)
