There is grey writing at the end of the website name (for example, this page is http://www.wordpress.com/help/contact, and ‘help/contact’ is in grey) which I would like to change. What is it called and how do I do this?

This is not something that depends on WordPress.com; it’s just how your browser displays the site address. The root domain is white, so it stands out. I’m not sure you can change this, but you can check the documentation for your browser.
