How do I forward my custom domain email when upgrading to a custom domain?

Background: I just upgraded to my custom domain (sericonconsulting.com). I haven’t set the nameservers yet for my domain yet because I want to set up my email properly first. I have a functioning email address at my domain, so I want to minimize the email downtime.
Problem: My current domain email is not hosted: Instead, HostGator, which currently hosts my site, forwards it to another email account. Once I set the nameservers, how can I forward my domain email from WordPress.com to that email account?

WordPress.com does not have mail servers. There’s a workaround here: http://en.support.wordpress.com/domains/add-email/
