How do I get a "header" inside my blog post to describe the upcoming paragraph?

Hello. I recently purchased a guided transfer last week (I went from wordpress.com to wordpress.org). I was writing a new blog post tonight, but now cannot find the little drop down menu to add a “header” within my new post as a way to title my upcoming paragraphs. The drop down menu used to be right below the bold and italic option. How do I get this little menu again so I can separate my paragraphs for easy reading? It used to be there in wordpress.com, but it is no longer there now that I switched to .org.
Also, I used to be able to make these “headers” different colors. This option to change the color of the text does not seem to be there either when I am writing like it was before on wordpress.com. Where did it go?
