How do I move a previous post to a new category?

You don’t move the post at all. Delete unwanted categories and add any desired categories. This can be done at the following places:
1. Post Editor — In the Categories module on the right side of the editor: delete unwanted categories, choose others from the menu, or add new ones.
2. All Posts — At a selected post choose Quick Edit, then at the Categories window uncheck the category (or categories) you don’t want and check those categories you do want to assign to the post. You can’t add new categories here. -
Looking at your above site, it seems that you have not yet created any categories as the Category widget only shows “uncategorized”. So before you get started adding your posts to categories, you may also want to read this support doc for a better understanding. http://en.support.wordpress.com/posts/categories/
Effective categorizing helps your content get discovered, so put some thought into what categories your posts naturally fall in to.
I know that “Blogging U” has also posted about effective categorizing. If I have time, I’ll try to hunt up some of their posts.
