How can I post a new post under one of my pages?

First you need to understand the differences between pages and posts.

There is only one dynamic page in a blog for posts and we cannot post to more than that one page. However, we can create the appearance that we have done that by setting up a custom menu and displaying Categories in tabs along the horizontal navigation menu. So I guess if you want to recreate the website feel through pages, you have to manually link to each other. So we could essentially build a site apart from the blog area. Good to know.

No not really. In a blog static pages sit outside the blog structure. A WordPress blog can either be structured as a page based website or its conventional post based structure can be retained.
