Seeing as you don’t do a free Trial – what are the options for cancelling subscription / payment? IE if I enter payment details, create a site and the WP product capibilities don’t fit what I need for my business – do I have to pay for a full years subscription regardless?

However you can request a refund of an upgraded plan if less than 30 days has elapsed (or 48 hours in the case of a custom domain). https://en.support.wordpress.com/refunds/
