  All the blog you tube videos talk about plugins. I have the premium plan but cant use them.

  Those videos are mostly talking about the WordPress.org installation. Numerous useful plugins are pre-loaded onto WordPress.com sites. To add others would require the Business plan or even a move to another host and the WordPress.org software.
