Query re. cookies and data privacy

I am just preparing my website for launch, and I am having difficulty establishing whether or not cookies will be used on my site. I don’t want to gather any data about visitors – but is this possible on WordPress? I’ve looked about the settings section but the privacy element as far as I can see just tells me how to draft my privacy policy. I know how to do this, as I am a data protection specialist, but I need to know the facts to get the detail right. So my question is whether I can authoritatively tell visitors that IP addresses etc. will not be automatically collected when they visit the site, or whether this is incorrect? If incorrect, how do I change the settings?
Many thanks for your help. My draft policy wording is included below as background:

  • Hi there,

Looks like you’re in the wrong forum. It appears that you’re using the self-hosted version of WordPress and you need to seek help at the WordPress.org forums:

    https://wordpress.org/support/

These forums are for WordPress.com hosted sites only. If you want to know more about the differences between WordPress.com and WordPress.org you can read this document:

    WordPress.com vs. WordPress.org

    Thanks and apologies!

  • No worries at all; the differences aren’t always obvious.

For what it’s worth, we do have a plugin that gives you the same cookies & consent widget available here on WordPress.com, if you’re interested in that:

    Homepage

Otherwise, there are several other plugins available. And you’ve got the forums at https://wordpress.org/support for more help. Cheers!
