Reordering videos in a multi-video player, editing the visible publish date

  Hi! I’m looking to edit the way videos appear in the video player on my homepage,. Now it defaults to displaying by reverse chronological order while also displaying the listed publish date. Is there a way to (a.) arrange them in a totally custom order regardless of publish date aside from just adjusting the publish dates individually to do so? (b.) display custom text in place of the publish date? For instance there are some videos I don’t want any publish date displayed, others where I might want it to just say ‘May 2019’ and others where I want a specific release date listed.
