Searching in-site Tags vs. using 'search bar' function?

Our site is used as an internal database of stories written by young people at our organization, tagged according to theme/date published/age of author/etc. I have two questions about using this functionality:
1) How do I search more than one tag at a time? For example, if I want to find a poem about pizza, can I search both ‘poem’ and ‘pizza’ simultaneously?
2) What is the difference between typing a keyword into my search bar and clicking on that word’s tag icon? They seem to pull up different stories, and I thought they would be identical.
