Hi there-
I haven’t written in a while. Had created what I thought was just a title for my entries when we adopted called ‘the adoption chapter’. Wanted to write another entry today and changed the category to family but obviously I didn’t change what needed to as my post today published still under ‘the adoption chapter’. How do I change that? Do I have to create a whole new site?

I’m not completely sure what you’re speaking of. Your site at http://stacycarroll.wordpress.com/ has the title “Family”. That is the name for your entire site.
You have a post, A Faithful Man, https://stacycarroll.wordpress.com/2018/09/14/a-faithful-man/, published under the category, Family.
Your previous posts were all published under the category “Adoption”.
Categories are a way to organise your site, grouping posts by specific topics, but are completely separate from your site title, and post titles. You can create as many categories as you want, assign multiple categories to a single post, and switch categories assigned to posts at any time by just editing the post.
With that info in hand, can you give me some more info on exactly what you’re trying to do?
