Welcome to “Plated for everyone”! Hi! I’m Kerry and everyone is welcome to enjoy the recipes I’ve created.
In a nutshell, I am passionate about food and love being creative! Which makes plated for everyone a great opportunity to express all the possibilities! I have always been into how flavors come together in food and mixing textures and ingredients to make something wonderful.
As a child I remember watching my dad make various dishes he ate growing up or as a young adult. Some of the dishes were so unique in flavors and textures (some I couldn’t pronounce 😊) and I loved sharing these moments making great food with him.
Early on, I created dishes using mostly traditional ingredients, passing down glorious food memories to my two children. All that changed in July of 2014 when, my third child, my youngest son was diagnosed with EoE (Eosinophilic Esophagitis). I was completely floored! He was not yet 2, barely been on solid food and now there was so many restrictions! A complete desperation came over me, wanting to preserve the wonderful memories I had with making food with my dad and so badly wanting to pass this down to my children.
Slowly, my thoughts turned from making wonderful memories to how am I going to give this child nourishment. From there, my thoughts turned to birthday parties, school events, family gatherings, holidays…. food is so much more than nutrition, its sharing and connecting.
After learning about this diagnosis, my first trip to the grocery store took me HOURS. I read every label and searched desperately for anything normal he could eat let alone enjoy. In the end, there was very little premade food he could have. At the time, he could only have about 6 different foods. Thankfully he can have a few more foods now, however because many of his allergies are rare (most not even on the national allergy registered list) 90% of prepacked foods are simply out of the question. Including a lot of gluten free, organic, vegan or healthier items.
I was saddened by the thought of him watching everyone else enjoying their food, while he sat on the sidelines. Everyone should be able to come to the table, eat and enjoy the wonderful blessing of food!
I knew the only way to give him a normal life was to make my own dishes! And so, it began….
Failure after failure! Yes, failure became my every day norm as I learned this new non-traditional cooking method. And with each fail, I learned something new. Grateful for each success and the fact that my family was completely fine eating my failed dishes (hey they still tasted good!) helped me grow and become better, until I failed less and less. YaY!
These recipes are for everyone!
My goal with plated for everyone, is to help others not have to recreate recipes and rather start building memories and opportunities of sharing with their families. Ideally, I want these recipes to be easily convertible to whatever the needs are of the person using it. The kinks are ironed out for you to come, enjoy cooking, eat and be happy!
