I’m working on creating new categories.
Do I need to publish every post under “Blog”? I don’t want every post to show on the main blog page, is this possible?
For example, I want my restaurant review posts to only be shown under “Fine Food and Wine”.

All of your posts will appear on the Blog page — there isn’t a way to remove certain posts and not others. But this is where the category links are useful! You could choose not to display ‘Blog’ in your menu and only add links to categories like ‘Food’.
I see you’ve set up some country categories :) If you wanted to make them easier to manage, you could make subcategories:

Please help. I switched themes to an optimized wordAD theme and half my blog is gone and all my work on menus and tabs disappeared. What should I do!??

Hi Megan,
When you change a theme, nearly everything comes with you. Your posts, pages, media, blogroll and all of your content stay. However, you will need to reassign your widgets and menu.
The widgets haven’t been deleted, they are inactive and visible on this page:
https://wordsfromatraveler1.wordpress.com/wp-admin/widgets.php
Each widget can be dragged to the correct sidebar area at the top of the page.
It looks you’ve already set up your menu :)
